Peach jam

2 cups peeled peaches, chopped Pectin
1 tbsp lemon juice 2 ¾ cups sugar

Place peaches in deep frying pan (wok-like). Add lemon juice and pectin, stirring well.

Cook for 10 – 15 min until boiling, stirring occasionalPeachJam_2ly.

Stir and add sugar and return to cook for 3 – 5 min to boiling again.

Boil 3 min and remove.

Skim and stir for 5 min, then pour into sterilized jars.

 

Yield: 2 – 3 small jars.
